Nestle has learned to reduce its chocolate sugar content by 30%, no taste lost

27.03.2018 21:55 "Agro Perspectiva" (Kyiv) — The Swiss company Nestle has produced the world first ever chocolate bar using a brand-new technology, Interfax-Ukraine says referring to the Nestle report. As to the report, the new technology allows to significantly reduce the sugar usage against similar products. As to the report, the new technological formulas have been tested on bars of white chocolate Milkybar Wowsomes. The company claims that these chocolate bars sugar content is 30% less against usual, with no artificial sweeteners present. At the same time, due to the boost of the number of other natural ingredients, the calorie content of the bars declined by only 3%. As to the report, the so-called «structured sugar» (Nestle reported back in 2016 about having had made it), melts faster within the mouth, thus cheating the taste buds. So, Nestle compares this effect with the cotton candy taste. Thanks to this effect, the new sugar quantity within the chocolate can be much down against the usual sugar quantity, with the chocolate taste properties remaining same. It is to be admitted, until now, the chocolate producers worldwide are using various substitutes to reduce the amount of sugar, but the harmlessness of their use causes many disputes among specialists.
